Honey Glazed Chicken & Carrots

Well, now you can have both with this delicious, friend-catching honey glazed chicken and vegetable recipe!!!


January the 18th is Winnie the Pooh Day!!!

So, to celebrate, I've concocted a few bear-themed recipes to make up the perfect garden party (or perhaps for a picnic in the thousand-acre woods?)



Everybody knows that HONEY is the perfect sweet to quell that rumbling in your tummy - so this recipe is inspired by none other than the cuddly Mr Winnie the Pooh himself and his friend Rabbit! Enjoy!!


Honey Glazed Chicken & Carrots

makes: 3 serves

time: 40 min total

Ingredients:

  • 1 cup brown rice and quinoa mix (or any rice you want)

  • 4 large boneless, skinless chicken thighs (cut into pieces)

  • 100g old-fashioned shaved ham

  • 1 medium onion (roughly chopped)

  • 2 Tbsp olive oil

  • 3 large carrots, sliced

  • 1¼ cup honey

  • ¼ cup garlic-infused white wine vinegar

  • sprinkle of thyme

Method:

  1. Cook the carrots and onions over a medium heat until they start to soften slightly. In a separate pot, cook the rice according to package instructions.

  2. Add the chicken and ham, rotating constantly until the chicken has whitened on all sides (about 5 minutes).

  3. Mix together the honey and white wine vinegar, and pour the mixture over the chicken into the pan. Stir to coat all the ingredients lightly before bringing to the boil.

  4. Reduce to a light simmer and sprinkle over the thyme, stiring through well. Leave until chicken has cooked all the way through (10-15 minutes approximately)

  5. Serve over rice (or on the side if desired), and spoon remaining sauce over the dish. Best served warm.
