Mock Turtle Soup - Alice in Wonderland

So there aren't any lobster quadrille's with this soup, but it's still tasty! Once of my favourite parts of Alice's Adventures in Wonderland was the Mock Turtle's surprising poetry (and let's be honest, how awesome would a giant turtle with a cow's head be in real life?)

Whilst a lot of the creatures and foods in Wonderland (unfortunately) don't exist - the Mock Turtle soup is all too real and delicious!!!



Mock Turtle Soup (From Alice in Wonderland)

serves: 6 servings

Ingredients:

  • 500g ground beef

  • 8 cups of water

  • 3 large carrots (chopped)

  • 3 stalks of celery (chopped)

  • 1½ large onions (finely chopped)

  • 1 cup tomato sauce

  • 1 cup Barbeque sauce

  • ½ cup Worcestershire sauce

  • Juice of ½ a lemon

  • 2 tsp salt

  • 1 tsp pepper

  • 2 eggs

Method:

  1. Brown the beef in a large saucepan. once cooked through, add all the ingredients (except for the eggs) to the pot and simmer lightly for 1 hour.

  2. Bring the pot to the boil, and then simmer again for another half an hour.

  3. Bring to the boil for the last time, and then add in both the eggs. Turn off the heat immediately and stir until the eggs have cooked and incorporated into the soup.

  4. Enjoy!

This soup recipe is perfect for those busy days when you don't have time to be standing over a stove for hours cooking -- just set it all up and go!
