Traditional Honey Bun Biscuits (Empire B

Who doesn't love a good, old-fashioned sweet bun? These treats are sticky and delicious and look just like the little biscuits from Disney Pixar's 'Brave' - just bigger (and bigger is better after all!!!)




If you're really committed, you can make these into perfect replica's of the movie biscuits, but I quite liked the rustic look - it's up to you!

Ingredients:

         ~ 3½ cups flour

         ~ 3 Tbs Honey

         ~ 2 tsp Castor Sugar

         ~ 3 Tbs Ground Almonds

         ~ 2¼ tsp dry yeast

         ~ ½ pint Beer (warmed to room temperature)

         ~ Small Pinch of Salt

         ~ 1 cup of Honey (for soaking)

         ~  Icing Sugar

         ~ tsp Lemon Juice

         ~ Water

         ~ 8 Raspberries or Cherries (to decorate)

Method:

1. Dissolve the yeast in the beer, and leave it to froth. Meanwhile, Mix the almonds and sugar in a large bowl, and then add in the flour and salt.

2. Make a small well in the middle of the mixture, and pour in the beer. Work it all together (you may need to hand knead this) until it has become a smooth and pliable dough. Leave the dough in a warm place for about two hours - until it has doubled in size.

3. Once it has risen, punch it down and knead for a few minutes before tearing it into 8 small buns. Allow the buns to rise for 15 minutes (covered with a tea towel). Meanwhile,, preheat the oven to 175.

4. Bake the buns for approximately 15 minutes until just lightly golden. Whilst still warm, cut a small hole in the tops of the buns - about the size of a marble - and fill with honey. (You can warm the honey in the microwave to make it easier to fill). Each bun needs to have about 2 Tbs of Honey in them).

5. Let the honeyed buns cool down before decorating any further. Meanwhile, mix the icing sugar with lemon juice and add a few drops of water at a time until it has formed a runny icing. Drizzle this over the tops of the cooled buns, being sure to cover the hole you created earlier. Place a single raspberry over the hole. As an extra step you can also sift some more icing sugar over the finished buns.

6. Enjoy!


Once you've mastered these Honey Buns, you can try filling them with something else - like jams or sauces (I'm definitely going to try filling mine with a chocolate raspberry sauce - with chocolate icing too!!!)
