These certainly are the shiniest cupcakes you ever did see - I used two different kinds of shimmer powder to dust them for the ultimate sparkly treat!
I made just a simple vanilla cake base for these - but you could do any flavour you like! After all, it's what on the outside that matters! ;)
Tamatoa Mini Cupcakes!
Ingredients:
1⅓ cup self-raising flour
A pinch of salt
½ cup milk
A few drops of vanilla essence
7 Tb melted butter
⅔ cup white sugar
2 egg
1 block white chocolate
¼ cup small pearls
½ cup small gummy lollies (I used yellow and orange jubes - to make the colouring easier)
Gold food spray
Gold food shimmer dust (you can substitute one or either of the shimmer dusts with some very fine sugar crystals if you'd prefer)
Sparkle shimmer dust
2 bananas
Method:
Heat your oven to 175°C (approx 350°F) and line a mini cupcake tray with cases (you can also use this recipe to make normal-sized cupcakes without any ingredient adjustments)
In a small bowl, mix your salt and flour, then set aside. In a separate bowl, mix together your milk and vanilla essence, set this aside too.
In a large, microwave safe bowl, mix your melted butter, sugar and egg together until fully incorporated. In batches, add your dry ingredients and flour to this mix - alternating between wet and dry until everything has come together.
Scoop 1 tablespoon of mixture into each cake case, and then bake for 10 minutes or until cupcakes have risen and are slightly springy to the touch. Allow them to cool for twenty minutes before continuing with this recipe. Meanwhile, you can dice your gummy candies so that they're roughly 2-3 times the size of your pearls.
Melt your white chocolate over a pan of simmering water, or in the microwave if you'd prefer. Dip your cupcake tops into the white chocolate and quickly cover the chocolate with your pearls and cut-up candy. Do this with all your cupcakes.
Spray your tops gold as per spray instructions - for mine I just have to hold it about 20 cm away and spray lightly. Allow this to dry before sprinkling your gold shimmer dust over the cupcake.
Using a small, sharp knife, slice your banana diagonally for length, and then carefully carve out Maui's hook shapes from the slices. You can easily find templates for this online, but I just decided to make a thicker fish hook with a bit of a spike at the end since it was a little bit less intricate.
Place the hook onto the cupcake, securing it between candies - if necessary you can drip a bit of extra white chocolate to hold it in place.
Finally, sprinkle your sparkly shimmer dust over the entire cupcake.

These are so cute and look really fancy - even though they're actually quite simple. Kids can help out with all the decorating - as long as an adult cuts out the hook shapes for them - and it's a fun way to pass the afternoon before an epic movie night!
