Peanut Butter & Oreo Mini-Cupcakes inspired by The Parent Trap!

Annie: "Oh, sure, I love Oreos. At home, I eat them with... I eat them with peanut butter."

Okay, so there's definitely nothing wrong with just munching on some Oreo's dipped in Peanut Butter - but when I saw these MINI OREO'S in the supermarket I knew I had to do something special with them - after all, today marks the ......


20th Anniversary of the Parent Trap!!!


(1998 version - my favourite!)



So without further ado - here we go!!!


Peanut Butter & Oreo Mini Cupcakes inspired by The Parent Trap

makes: 9 mini cupcakes (or 3 average size - but you will need to adjust the decoration amounts to suit a larger cupcake)


Ingredients:

  • ⅓ cup self-raising flour (if you only have plain you can just add ¼ tsp of baking powder)

  • ⅛ cup milk (you might need a splash more if your mix is too dry)

  • 2 Tb melted butter

  • ⅛ cup white sugar

  • ½ of a beaten egg

  • 2 Tb Peanut Butter

  • 2 Tb cocoa powder (you might need one extra if the mix is too wet)

  • 15 mini Oreo's (split into two separate bowls - cookies (crushed) and cream (thinly sliced))

(for the decoration)

  • 9 mini Oreo's

  • 3 Tb Peanut Butter

  • 70g butter

  • 140g icing sugar

  • 1 tsp milk

  • 50g melted chocolate (dark or light - it doesn't matter overall!)

(If you want to use store-bought chocolate frosting - I won't judge you! - then you can disregard the last four ingredients!)


Method:

  1. Preheat your oven to 170°C and line a mini cupcake tray with 9 cases.

  2. Add the butter, white sugar and egg in a large bowl, and mix together until the sugar has entirely dissolved.

  3. Working in alternating batches, add the flour and milk to the mixture - until it has all incorporated.

  4. Add your Peanut butter and cocoa powder - mixing well.

  5. Fold in three-quarters of your cookies and cream pieces, keeping a small amount in reserve.

  6. Spoon one large tablespoon amount into each cupcake case, until your mix is evenly distributed, and bake for 10-12 minutes. Allow cakes to cool completely before continuing.

  7. Beat the frosting butter in a large bowl until it has softened. Add half of the icing sugar and beat again - until smooth. Then add the other half and half of your milk and beat again until the mixture is smooth and creamy.

  8. Fold in your melted chocolate and remaining Oreo cream pieces until it has fully incorporated. Add in the rest of your milk only if the mixture is too thick.

  9. Using a star-shaped nozzle, pipe a medium sized swirl in the center of your cupcake, leaving a small edge still showing.

  10. In a microwave safe bowl, heat up your Peanut Butter for about twenty seconds or until just melted - and then gently spoon it over the top of your cupcakes, rotating them slowly so that the Peanut Butter drips evenly along the edges.

  11. Sprinkle your remaining Oreo cookie pieces over the top of the cupcakes, and then push a single mini Oreo into the top (pro tip - make sure that the OREO words are upright and not chipped to get the best results!)

  12. Enjoy!!!

These are super quick and fun to make - so make sure you always keep a few of these delicious treats handy in case you happen to run across your long-lost twin!
