Mini, Cheesy, Vegetable Pies - Peter Rabbit

The Peter Rabbit movie is coming out soon and I just can't wait!!! 

So, of course I set about creating the perfect menu to go along with watching everybody's favourite pesky rabbit (disclaimer: no rabbits were harmed in the making of these recipes!)

These little pies are absolutely full of tasty vegetables, cheesy goodness and are totally delicious!!!


Peter Rabbit Mini Vegetable Pies

makes: 12 hand pies

Ingredients:

  • medium white potatoes (cut into small cubes)

  • 1 medium sweet red pepper (finely chopped)

  • 1 small carrot (chopped)

  • 250g creamed corn

  • 3 hard boiled eggs (chopped)

  • 2 cups grated cheese (I used sharp cheddar)

  • 1 egg (beaten, for egg wash)

  • 2 tbsp Barbeque Sauce

  • 550g all purpose flour

  • 170g unsalted butter

  • 210g water

Method:

  1. Cook potatoes over high heat for 6 minutes or until just tender. Drain and transfer to a bowl to cool down.

  2. Whilst the potatoes are cooling, make the dough by heating the butter and water in a saucepan until it comes to a boil. Pour the butter and water into the flour and mix until it forms a doughy ball. Roll out the dough on a  lightly floured surface and cut twelve circles (12 x 10.5 cm) and then use them to line (buttered/oiled) muffin tray.

  3. Add the creamed corn, sweet pepper, carrot, hard boiled eggs, cheese, barbeque sauce and salt & pepper (to taste) to the potatoes, mixing well.

  4. Spoon the potato mixture into the pastry, leveling with the edge of the pastry crust. Cut 12, smaller circles to cover the tops of the pies - press this down around the edges to create a seal.

  5. Decorate the tops of the pies however you like, with extra pastry (I shaped some leftovers into carrots for the tops of my pies) or by scoring (light indents with the back of a knife) the surface of the pies.

  6. Brush the tops of the pies with the egg wash and bake for around 40 minutes or until lightly golden on top. Let them stand in the tray for 5 minutes before turning out. Enjoy!

  7. These little pies are so fun and easy to make, and you can always add in a few different ingredients to suit your liking (I personally love to add a quarter cup of peas to the creamed corn just to give it a little bit of sweetness)
