Dr Seuss - Green Eggs and Ham

Okay, so these aren't really green eggs - but with a bit of colouring and creativity - they can be!!!

My favourite way to eat eggs is deviled (with just a sprinkle of paprika on top), so that's how I made these - and they are certainly delicious!!!


So without further ado, let's begin!


Green Eggs and Ham

makes: 6 servings


Ingredients:

  • 6 eggs

  • ⅓ cup of mayonnaise

  • Green food colouring

  • Thick cut ham (or bacon, if you can't find thick-cut ham in your local market)

Method:

  1. Begin by hard-boiling the eggs. Place the eggs in a pot covered by approximately 2 centimeters of water (1 inch) and a pinch of salt, and bring quickly to the boil, stirring constantly (this keeps the yolks in the center of the eggs, which is easier to fill).

  2. Once the water has boiled, take the pot off of the stove and cover it with the lid. Leave to rest for 12 minutes before placing the eggs in a colander and running under cold water for about five minutes. Remove the shells cleanly.

  3. Slice each egg in two lengthwise, and scoop out the yolks using a teaspoon (do this carefully so you don't break the sides of the eggs white)

  4. Mash the yolks together with the mayonnaise in a separate bowl, and season to taste. Once the egg yolk has been thoroughly mashed, add in a few drops of green food colouring until you reach the desired shade (I left mine a bit lighter, but you can take it as far as you want).

  5. Using a teaspoon or a piping bag, fill the egg whites with the green yolk.

  6. Fry the ham as preferred, or, alternatively - if you can't get your hands on thick-cut ham like me - create some quick and tasty bacon chips by cutting bacon into two inch squares and baking them in the oven at 175°C for 20 minutes, or until red and crisped.

  7. Enjoy!

These eggs are a simple, fun accompaniment to any dinner, and (contrary to the storyline) there won't be a single person saying "I don't like eggs and ham!"
