Crunchy Cheesy Carrot Fries

These carrot fries are crusted in garlic and cheese and everything delicious!!! Even the mixture I used to season them didn't last long in my household - the bowl was practically licked clean!!!

If there was ever a surefire way to trick your children into eating vegetables, this is it! And they're so quick and simple, it's the perfect last-minute accompaniment for any mid-week dinner.


Carrot Fries

makes: 2 serves


Ingredients:

  • 3 Carrots (cut into 1cm thick fries)

  • 3 Tbs Olive Oil

  • ¼ cup Shredded Cheese (any kind of cheese will do - but I find a nice sharp cheddar tastes best)

  • 2 Tbs Minced Garlic

  • Salt and Pepper (to taste)

Method:

  1. Preheat the oven to 175°C and line a small baking tray with paper. Set aside.

  2. Mix Oil, Cheese and Garlic in a bowl. Season to taste.

  3. Using you hands, mix and coat the carrot pieces with the dressing, making sure every fry has been coated as fully and evenly as possible. Place them individually onto the lined tray, about 1 centimeter apart.

  4. Bake for 15-20 minutes, turning after 8 minutes, until nicely golden crusted and crisp.

  5. Let them rest on a plate covered with a sheet of paper towel to absorb the excess juices.

  6. Enjoy!
