Baked Cheesy Broccoli Tots - Inside Out

Okay, caution, there is a dangerous smell, people. Hold on, what is that? That is not brightly colored or shaped like a dinosaur, hold on guys... it's... broccoli!

Well, they may be made with broccoli, but I promise that everybody is going to love these delicious little bites as a side to any meal - or even just as an in between snack!!!




So, I've been away for a little while due to an unfortunate combination of illness, deadlines and an upcoming comiccon - but I'm back and I'll be posting a few extra recipes and posts in the next week to make up for it! Enjoy!





Baked Cheesy Broccoli Tots


Ingredients:

  • 2 cups broccoli (separated from the stems)

  • 2 eggs

  • ½ brown onion diced

  • 1 cup grated cheddar cheese

  • ⅔ cup breadcrumbs

  • ½ teaspoon salt

  • ¼ teaspoon pepper


Method:

  1. Preheat the oven to 175°C and line a large baking tray with baking paper.

  2. Blanch broccoli in a pot of boiling water for 1 minute and then transfer immediately to cold water.

  3. Mix all the ingredients together and ensure the broccoli pieces are well coated. Set them onto the baking sheet a little bit apart from each other, about 1 centimeter, and bake for 20 minutes or until golden brown. Don't forget to flip them after about 10 minutes!

And that's it! So delicious and easy! I love eating these with sweet chilli sauce or barbeque sauce - and you can always personalise them a bit by adding some chilli to the mix or using a mix of different cheeses! Yum!
