Pumpkin Juice

Every Feast needs an accompanying drink to quench the thirst of your party-goers!

And so I present, as the accompaniment to my Harry Potter and the Philosopher's Stone 20th Anniversary Celebration Feast..... PUMPKIN JUICE!


Pumpkin Juice

makes: 4 serves


Ingredients:

  • 1 Butternut Pumpkin (small)

  • 2 cups Apple Juice

  • ⅓ cup Honey

  • 1 tsp Vanilla Extract

Method:

  1. Preheat oven to 175˚C. Scoop the guts from the pumpkin and put it in a roasting pan skin side up. Cover this with foil and bake for 90 minutes.

  2. Scoop the flesh from the skin (sorry about that sentence), and pass it through a fine sieve until all that remains is a dry mush. Set this aside (It goes wonderfully in pies and cookies!)

  3. Blend in a blender with the other ingredients. Pour liquid into a serving jug with ice to chill. 

Enjoy!


This recipe really is delicious and tastes just like the Pumpkin Juice you can get at the Three Broomstick's at Universal Studios (which is honestly one of my favourite places in the entire world!!!)


It also isn't too sweet, so it can go perfectly with anything that you want it to!
